Knife Skills & Minestrone Soup

In this hands-on class, we’ll build confidence and skill with one of the most essential tools in the kitchen: the knife.

We’ll begin by exploring different types of knives and blades, including what they’re best used for and how to choose the right one. Next, you’ll learn proper knife-sharpening techniques. Feel free to bring your own knife to sharpen and use during class.

You’ll then practice classic knife cuts, including:

  • Batonnet
  • Small, medium, and large dice
  • Mince
  • Chiffonade
  • Roll cut

All of the vegetables you prepare will be used to make a hearty vegetarian Minestrone Soup with farro. If you are gluten-intolerant—even to ancient wheat like farro—no worries; we’ll simply omit it for you. I will have the homemade vegetable stock simmering when you arrive, so you can see that process as well.

While the soup simmers, we’ll talk about the nutritional benefits of each ingredient. We’ll finish by sitting down together to enjoy the meal you’ve created.

No prior experience necessary—just bring your curiosity and appetite.

The class will be held in my friend’s lovely home near Annadel State Park in Santa Rosa. The exact address will be sent the day before the class.
