Cupcakes

Hello everyone,
My web master, James Foreman, does a great job of keeping my web site up to date and ever-improving. He just sent me this months key-words search by all of you. Guess what the #1 word searched on my web site was? Yes, cupcakes!
I can see I need to put more effort forth to create additional healthy cupcake recipes. I'm on it! Here are some tips to get you started creating your own recipes from existing recipes.
Try substituting half whole wheat flour (or at least whole wheat pastry flour) for half of the unbleached flour in your recipe. Level off the remaining unbleached flour in the measuring cup and take out 1-2 tablespoon. Now add back in the 1- 2 tablespoons of either oat bran or wheat germ for added fiber. You can also substitute applesauce for half the butter in a recipe. If I am making something with chocolate, I will use prune puree as the darkness of the prunes brings out the richness of the chocolate. To make prune puree simple place some prunes in a saucepan and add a bit of water. Simmer for a few minutes; cool and puree. This works great in brownies. Be sure to use non-aluminum baking powder and sea salt.
You use these simple tips in cake, cookie and bascially any dessert recipe.
